I had a friend with the same problem, there was an update to the Apple TV firmware with support for mirroring - since this is new to iOS 5 which just came out last Wednesday. @Brian

ITunes doesn't even show the AirPlay button it normally does in the bottom right of the regular window. I've checked all over both devices for settings and indications to no avail, including the 'super-secret' double tap and swipe you talk about being on the 4S, <i>and</i> looking for the "enable remotes" option in iTunes' (10.5) "Device Preferences" window, like you used to do on earlier versions of iTunes. I highly doubt that the fact I have a non-Apple wireless router makes any difference, and the wifi signal is consistent and high-powered. I feel like I'm missing something on at least one device.
